The two step segmentation process is one in which first individual or groups of countries are identified on the basis of national characteristics and then within this macro-segment the market is divided on the bases of customer characteristics.

The criteria that has been employed in selecting Greece is that the country has a good contract enforcement mechanism in place, Greece is a parliamentary republic. Its constitution provides for separation of powers, and a stable democracy. Within Greece, the segment selected is that of upper middle class which will buy gourmet olives. This is the segment that will appreciate and buy olives like Tequila Jalapeno stuffed olives, spicy garlic stuffed olives, and Mesquite Almond Stuffed Olives (International Monetary Fund, 2008), .
