Response: It is called beta-oxidation because each round of oxidation results in the oxidation of the beta carbon. What's the beta carbon? If we consider the structure of a fatty acid, we notice that there are two distinct ends, the -COOH end and the methyl end. The carbon in the -COOH group is the first carbon in the molecule. The carbon next to it is the alpha carbon while the next carbon past that one is called the beta carbon. Look at what happens during beta oxidation. The beta carbon goes from CH2 to C=O. That's oxidation.
