There are many flavour compounds produce microbes. Flavor compound contain both volatile and nonvolatile parts. The volatile ones produce both taste and aromas, whereas the nonvolatile one produce taste only. Microbial synthesis is responsible for most flavor compound. Microorganisms can produce the flavor compounds as secondary metabolites during fermentation. One of the flavor compound produce by microbes is Vanillin.

Vanillin is a ubiquitous flavour that occur in "Vanilla planifolia" beans (1). It is often used in foods and beverages. Several subtrates like eugenol, phenolic stilbenes, lignin, ferulic acid, and isoeugenol acid can be converted to vanillin.

The microbes will convert eugenol and isoeugenol to the flavor compound vanillin.

Fungi Aspergillus niger and Actinomyces can also convert ferulic acid to vanillin. (1)

Pycnoporous cinabariunus can convert ferulic acid to vanillin. (1)

Most microbes convert ferulic acid to vanillic acid and then to vanillin. (1)
