Can you answer the following for Aspartame
(a) Describe the chemical composition & characteristics, including the metabolites produced from its
digestion in the human body.
(b) Describe the benefits and/or applications (including amount of calories provided, foods in which it
is normally used, etc)
(c) Explain why foods/beverages with aspartame must show the statement "contains phenylalanine"
on the label.
(d) Explain why products containing aspartame must bear a best before date on the label.

Response: Aspartame is a dipeptide made up of two amino acids, a normal one and a chemically modified one: the normal one is aspartate and the chemically modified one is a methylester of phenylalanine. The two amino acids are bonded together in the typical peptide bond, which is an amide linkage. Aspartame biochemically degrades into a number of breakdown products. The main three are aspartic acid (aspartate), phenylalanine, and methanol. It's the methanol that can cause serious problems. The methanol can break down into formaldehyde and formic acid. These are quite toxic.
